The Blanchard's prepare a hearty dinner for several hungry families at their home featuring quick chicken breasts with bacon, marsala, peas, and cream, a dish of roasted fall vegetables, and a comforting white chocolate and apricot bread pudding for dessert. Melinda also stops by a local bakery to select fresh bread for the evening.

Then the Blanchard's host a casual brunch for friends, serving up scrambled eggs with roasted cherry tomatoes and chives, Vermont country ham in dark beer, baked onions with rye bread and cheddar, and peach coffee cake. And Bob visits a local cheese maker to learn how they craft cheddar cheese by hand.

Bob and Melinda Blanchard have been married for over thirty years and are the co-owners of Blanchard's Restaurant on the Caribbean island of Anguilla. They are also the authors of A Trip to the Beach and a cookbook, At Blanchard's Table. They divide their time between Vermont and Anguilla.
